Hispanic recipes differ for each country, region, and town. Food is not only prepared in different ways, they also enhance it by mixing and experimenting on their ingredients and spices. Hispanic people prefer certain types of foods. Food preferences usually reflect a certain culture. Hispanic groups like Mexicans favor amaranth and corn. South Americans favor potatoes, wheat, and quinoa but a large quantity of meat is eaten in livestock. In the Caribbean and coastal regions of Latin America, they prefer rice.

Tortillas are prepared differently in various Spanish American cultures. You will find more beef in Texan tortillas compared to Spain’s.

Portuguese cuisines also offer a combination of ingredients such as pickled pork with shellfish, and roast duck with ham and chorizo.

It is not news that the cuisine of America and the cuisine of Mexico are quite different things. Mexican food recipes, for example are certainly not very similar to those found in America. Strangely enough, Canadian food is rather similar to our own, as is often the case with neighboring countries – so why is the culinary tradition of our southern neighbor so different from ours? Mexican recipes use different ingredients than we commonly see in the average grocery store and create flavors, which seem exotic to American palates.

A Look at the Uniqueness of Mexico’s Food History

There are two important reasons why Mexican food differs so greatly from the standard fare in the United States. One is historical. Unlike the United States, Mexico spent a much longer time as a Spanish colony than did the US. It is true that parts of the US were originally Spanish territories, though the Spanish colonial period lasted for a much briefer length of time here, with the influence of Spanish cuisine being pronounced mostly in regions, which were once Spanish territory, largely those bordering Mexico.

The US has a different history, being a former British colony with most of its early immigration coming from northern Europe and having different culinary traditions. This alone accounts for some of the divergence of Mexican and American cooking, since traditional Mexican recipes have a profound Spanish influence which is missing from most American cooking.

For a long time, however, immigrants to Mexico from the old world hailed, for the most part, from Spain, leaving an indelible stamp on the new nation’s cuisine. Many Mexican recipes are adaptations of Spanish dishes, with some classic recipes from Spain surviving intact. This led to a distinctive blend of culinary traditions drawn from Spanish and indigenous ingredients and cooking methods.

The Spanish are not the only immigrants to Mexico who have contributed to Mexican food, of course. The popular Mexican recipe al pastor came to the country with immigrants from Lebanon and Syria and is an adaptation of the Middle Eastern dish shawarma. However, unquestionably the Spanish have had the strongest influence over Mexican food recipes.

The US has had a much more diverse population historically, meaning that American cuisine is more of a patchwork quilt of different influences and ingredients, which is characterized by constant change. By contrast, Mexico has been able to develop its own style of cooking; but Mexican cooks do of course adapt the foods of other countries to local tastes as well as enjoying them as they are.

Locally Available Ingredients Make the Difference in Mexican Food

The other important factor in the difference between the cuisines of Mexico and the US is in the ingredients used. Just like in this country, Mexican cooks and Spanish colonists alike have always worked with the ingredients, which were widely available. In Mexico, of course that meant avocado, chili peppers, corn, pumpkins, pineapple, and other produce typical of the country’s warmer climate.

This blend of native ingredients and recipes with those brought over by the Spanish is what made Mexican food what it is today and many of the most famous Mexican food recipes clearly show this marriage of old world and new world cuisines. From tacos to soups to Mexican casserole recipes, this is one very successful – and very popular type of fusion cuisine.

Do you rush home from work and have a dozen things you need to rush to do?  Dinner, ballgames, music lessons, school functions, church activities, etc; sound familiar?  Busy cooks, everywhere, here is a great recipe for those busy nights.  This very tasty Taco Salad Casserole is Quick and Easy because there is no baking time involved.  And your family will love it!  In fact, they will probably love it so much they will request it often.  So you may get to make it on evenings that are not necessarily busy.  In that case, sit back and just relax for awhile!  Imagine that!

TACO SALAD NO-BAKE CASSEROLE

1 1/2 lb lean ground beef

1 can refried beans
1 small can tomato sauce
1 pkg taco seasoning mix
1 small can green chilies, chopped
2 cups chopped lettuce
1 cup chopped onion
2 medium tomatoes, diced
1 small can sliced black olives, drained
1 bottle mild taco sauce
2 cups shredded Mexican-blend cheese
1 bag taco chips
sour cream for garnish, if desired

In a large skillet cook ground beef until no long pink; drain well. Wipe out skillet with a paper towel and return meat to skillet over a low heat. Add the refried beans, tomato sauce, taco seasoning mix, and green chilies. Continue cooking slowly, stirring frequently until heated thoroughly. Spread the taco chips on the bottom of an oblong casserole dish. Spoon the ground beef mixture over the chips. Drizzle the taco sauce evenly over the beef mixture. Layer the remaining ingredients as follows: lettuce, tomatoes, onions, black olives, and shredded cheese. Serve topped with sour cream, if desired.

1 tbsp chili powder
3 to 4 pound fryer, cooked, boned and diced
1- 12oz pkg shredded American cheese
1- 10oz can chopped tomatoes & green chilies (Ro-Tel if available)

Directions:

Preheat oven to 350F. In a 10×14 inch greased casserole oven dish, layer half the tortillas dipped in hot chicken broth, just long enough to soften. In a skillet, sauté onion & bell pepper in butter. Stir in soups, chili powder and diced chicken. Pour half the mixture over the dipped tortillas, then half the shredded cheese. 1/2  cup           Vegetable oil

1/2  cup           Lime juice

1      cup           Tequila

1/4  cup           Tomato paste

2                    Garlic cloves — minced

1                    Whole jalapeno pepper

1 1/2  pounds        Chicken breast*

10                    Flour tortillas for fajitas

3      tablespoons   Vegetable oil

1                    Large bell pepper — cut into

1                    Large onion — cut into strips

1                    Large tomato — cut into chunks

*Boneless, skinless breast, cut into strips; or skirt steak.

In a glass bowl or baking dish, combine 1/2 cup oil, lime juice, tequila, tomato paste, garlic, jalapeno, salt, chili powder, and cumin. Blend well.

Add chicken, cover, and marinate in refrigerator at least 6 hours or

overnight.  Wrap tortillas in aluminum foil. Bake 15 minutes while

preparing fajitas. Remove chicken from marinade. In a large, heavy skillet over medium-high heat, heat 3 Tbl oil.  Add chicken and cook, stirring constantly, 5 to 7 minutes or until chicken is done. 1/4  cup           Chili powder

6                    Garlic cloves — crushed

5      tablespoons   Strained fresh lime juice

3      tablespoons   Olive oil

1      tablespoon    Cumin

2 1/2  pounds        Stewing beef cut into 1/2 in

28      ounces        Italian plum tomatoes

Drained and crushed

2      cups          Beef broth

12      ounces        Bottle dark beer

1                    Large onion chopped

2                    Jalapeno chilies — minced

10      ounces        Pkg. frozen corn — thawed and

25                    Pimento stuffed green olives

1/2  cup           Pimentos — drained  chopped

Salt and pepper

20                    Taco shells

12      ounces        Sharp cheddar cheese — shredd

1/2                Bunch romaine lettuce — chopp

4                    Chopped seeded tomatoes

Hot or mild salsa

1      cup           Sour cream

Mix chili powder, garlic, lime juice, 3 Tbs. olive oil and cumin in a

large bowl to form a paste.  Add the beef and mix till coated. Refrigerate 24 hours, stirring occasionally. Position rack in lower third of oven and preheat to 350 F. Combine marinated beef, canned tomatoes, broth and beer in a Dutch oven.

Bring to boil over high heat. Cover, transfer to oven and bake for 45

mins.  Uncover and continue baking until beef is tender, about 45 minutes more.  Cool, shred beef and return to cooking liquid. Cover and

refrigerate overnight.

Heat 3 Tbs. oil in heavy skillet over medium-low heat.

Add onion and jalapenos then cover and cook until onion is tender and

lightly browned, stirring occasionally, about 15 mins. Strain beef cooking liquid into skillet, Bring to a boil.  Reduce heat and simmer uncovered until sauce is thickened and reduced to 1/2 cup, stirring occasionally, about 50 mins.

Mix in beef. (Can  be preparted 1 day in advance and refrigerated). Add

corn, olives, and pimentos and stir over medium heat until just heated

through, about 5 minutes. Season with salt and pepper to taste. To

assemble: Half fill taco shells with beef mixture.

Top with cheese, lettuce and chopped tomatoes.  Serve immediately,

passing salsa and sour cream separately.

Note: The same filling also works in chimichangas and enchiladas, and is delicious spooned over toasted hamburger rolls. It can also be frozen.
